Stuffed Sweet Potatoes
Here’s another delicious and healthy stuffed sweet potatos recipe!
3 medium sized sweet potatoes
1 bag of vegan mayonnaise
2 tablespoons olive oil
2 tablespoons lemon juice
1 spoon of garlic powder
200 gr of vegetable cheese
Wash sweet potatoes well and cut in half. Bake in the microwave at the highest level for 10 minutes or in the oven at 200 degrees for about an hour. The sweet potatoes are done when they are soft in the middle. Hollow out the middle of the sweet potatoes and then mix them in a bowl with the vegan mayonnaise. Set the bowl aside to use later when serving.
Mash the avocado and add the olive oil, lemon, garlic powder and a pinch of salt, mix well.
Stuff the sweet potatoes so that one-third of the skin is filled with the sweet potato filling, the second third with the avocado filling, and the third third with the plant-based cheese.
Thinly slice the radishes and onions and add to the pan.
The sweet potatoes can be garnished with any spices and toppings you like.
