Beetroot noodles with vegan yoghurt
Beets are fairly low in calories and high in vitamins and minerals. It contains folic acid, vitamin B1, vitamin B2, vitamin B6, vitamin C and beta-carotene, a precursor of vitamin A. We have a new recipe for all pasta lovers among you!
- 1 pack of pasta
- 200 ml vegan sour cream for cooking
- 3 smaller beets
- 3 tablespoons lemon juice
- 2-3 cloves of garlic
Cook the noodles according to the directions on the packet. Peel the beets, cut into pieces and cook until tender. When the beetroot is ready, puree everything together with the sour cream and garlic in a blender. Season with salt, pepper and lemon juice.
Pour the sauce over the drained, cooked pasta and simmer over low heat until combined. Depending on the length of cooking, the sauce will be thinner or thicker.
Once you are satisfied with the consistency of the sauce, the dish is ready!
