Stuffed Tomatoes

Ingredients:
- 5-6 medium tomatoes
- 300g oyster mushrooms
- 60g couscous
- 1 onion
- 2 carrots
- 2-3 cloves of garlic
- 50g cheese (optional vegan cheese)
- olive oil
- Salt
- pepper
- Parsely
Preparation:
Wash the tomatoes and remove the part around the stalk. Carefully hollow out the inside. Cut the onion and oyster mushrooms into smaller cubes. Finely grate the carrots and crush the garlic. Add olive oil to a deeper pan and sauté the onion and carrots over medium-high heat, then add the garlic and mushrooms and sauté together for about 10 minutes. Finally add the pre-cooked couscous, just enough to combine everything. Then fill the tomatoes with the mixture.
Line a casserole dish with parchment paper, spread the tomatoes previously filled with the mixture on top and pour the cheese over each tomato. Bake in the oven for about 20 minutes at 180 °.
